Purple Carrot Salad with Fresh Mint, Pistachios and Hemp Seeds

Ingredients

2 large purple carrots, shredded

juice of 2 limes

1/4 cup virgin olive oil

1/3 cup chopped fresh mint leaves

1/3 cup raw pistachios

1/3 cup hemp seeds

1/2 tsp pink Himalaya salt

freshly ground black pepper to taste

Directions

In a large bowl mix all the ingredients together. Adjust the taste to your personal liking and serve. As always, enjoy in good company!
